What’s for Supper?
On the days mom would make my favorite dinner, I knew immediately what we were having for supper. The mixture of flour and herbs filled the air. The sound of the butter crackling in the oven caught my attention. Flour dusted the countertops, and potatoes boiled on the stove. When mom fixed my favorite meal, she would fix fried chicken, potato salad, and corn on the cob. Sometimes she would add macaroni salad to the mix and often she included a large leafy green side salad too. But when she made her fried chicken, everyone came running. It was the perfect summertime meal.
Dinners at home were the best. We would all sit around the kitchen table. With my parents, brothers and I, dinner was never a quiet affair. We shared the escapades of our day while one sibling or another tried putting their spin on the daily adventure. Mom and dad would laugh while asking questions. Those moments were sweet times.
Mama’s Fried (baked) Chicken Recipe
Ingredients:
About a 3-pound chicken, cut up.
2 sticks of butter
1 cup flour
1 teaspoon paprika
1 teaspoon salt
½ teaspoon pepper
1 cup milk or buttermilk
I egg
Heat oven to 425°
First, take a cup of milk or buttermilk and egg, and stir mixture.
Next, soak chicken in milk or buttermilk mixture
Line a pan (13×9) with tin foil.
Melt two sticks of butter in pan.
In a bowl mix 1 cup of flour, one teaspoon paprika, 1 teaspoon salt, and ½ teaspoon of pepper. Coat chicken in flour mixture, and place in pan.
Bake chicken for 30 minutes. Turn chicken over and bake for another 30 minutes.
Place chicken on plate with paper towels and drain before serving.
Mama’s Potato Salad
10 potatoes
4 – 5 boiled eggs
1 diced red onion
2 1/2 tablespoon of sweet relish
1/4 cup of sugar
1 1/2 cup of mayo
2 teaspoons of mustard
a dash of sweet pickle juice
1/8 teaspoon of salt
pepper to taste
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop.
In a large bowl, combine the potatoes, eggs, onion, relish, pickle juice, mustard, salt, pepper and mayonnaise. Mix together well and refrigerate until chilled.
Ah yes…my family’s potato salad, too. 🙂

I copied your chicken recipe cause dang that sounds delicious and something I can do. I love potato salad but we’ve sworn off breads and starches. I can’t say I miss them, although when it comes to potato and macaroni salad, the summer will seem long without them. lol
